May Jewish People Murder Gentiles?
The Talmud does not condone or endorse murdering anyone, including non-Jews. Rather, the quote in question "Kill even the good among the gentile" from Sofrim 15:10, relates to the state of total sectarian war.
Rabbi Shimon Bar Yochai was referencing when Egyptian civilians, the Pharaoh, and his army were in pursuing the fleeing Jews, particularly as they sicced their livestock and pets on the Jews.
